Ingredients

For the Mango Lassi Popsicles
  • 2 ripe mangoes peeled and diced The star of the show! Make sure they are sweet and juicy for the best flavor.
  • 1 cup plain yogurt This adds creaminess and a slight tang that balances the sweetness.
  • 1/2 cup milk Adjust the creaminess to your liking; you can use whole milk or a dairy-free alternative.
  • 1/4 cup honey or sugar Sweeten to your taste! Honey adds a lovely floral note, while sugar works just fine.
  • 1/2 teaspoon ground cardamom This spice adds warmth and a hint of exotic flavor.
  • a pinch salt Just a little to enhance all the flavors.
  • Fresh mint leaves (optional, for garnish)

Equipment

  • Blender
  • Popsicle Molds

Method

  1. Step 1: In a blender, combine the diced mangoes, yogurt, milk, honey (or sugar), ground cardamom, and a pinch of salt.
  2. Step 2: Blend until smooth and creamy—this should take about 30 seconds.
  3. Step 3: Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
  4. Step 4: Insert sticks into the molds and freeze for at least 6 hours or until solid.
  5. Step 5: To release the popsicles, run warm water over the outside of the molds for a few seconds. This will help them pop right out!
  6. Step 6: Serve immediately, garnished with fresh mint leaves if desired. Enjoy your homemade treat!

Notes

These popsicles are best enjoyed fresh, but they can be stored in the freezer for up to 2 months. Just be sure to wrap them well in plastic wrap or store them in an airtight container to prevent freezer burn.
